Rhubarb & strawberry trifle with prosecco, orange mascarpone & pistachio-lemon praline

It’s been a busy week, so I’m going to post a few bits and add the recipes later.

Being almost at the end of rhubarb season and at the beginning of strawberry season, now is a great time to make this, and then slump into a sofa and shovel it into your mouth with gasps of pleasure. I did. The flavour combinations are delightful.

Taken from Denis Cotter’s marvellous new book ‘For the Love of Food’, a corny title in my opinion but I can’t resist buying his books which are the finest I’ve found for great vegetarian food.

Putting them into martini glasses seemed like a good idea at the time, but they were messy to eat, rhubarb juice mixed with prosecco adorned our clothes. We dumped them into bowls and scoffed quite happily after that. The trifle that is. Not the clothes.
